Hattie’s Hoppin’ John
Ingredients
Produce
- 1- lg Onion
- 3 stalks Celery
- 6 cloves Garlic
- Fresh or dried herbs if you need (thyme, sage, rosemary, whatever you like really, but choose the for the magical property [of abundance] as much as flavor)
- 2 Green chiles or jalapeños, or 1 green bell pepper (or canned)
- 2 cups fresh cooking greens of choice (or if you must, frozen chopped greens)
- Green onions or chives to top (optional)
Meat, if you eat it
- Ham bone, ham hock, frozen bacon pieces, whatever is handy
- Roast turkey leg and wing (these are holiday leftovers in my house, and I freeze them for this dish). Skip it or substitute it with smoked sausages. I prefer more meat.
- Seasonings
- Cayenne (or Cajun seasoning or paprika)
- Salt
- Black pepper
Dried Goods
- 4-6 cups bone Broth or vegetable broth of choice
- 28-oz canned Diced tomatoes (panty substitution: 1 15-oz canned diced, 1 10-oz can Rotel. Especially useful if you don’t have fresh peppers)
- 1 lb dried Black-eyed peas
- vinegar (white, apple cider, balsamic, rice, malt, whatever is handy)
Fat
- 4 tbsp Butter/ghee/bacon fat/lard/oil
Plan to serve with rice or noodles, mashers, cornbread, or biscuits. Top with vinegar and green onions or chives if you can.
